Grapes Appendix Contents

Kefir culture

Kefir is a fermented milk drink that originated with shepherds of the North Caucasus region, who discovered that fresh milk carried in leather pouches would occasionally ferment into an effervescent beverage. It can be prepared using coconut or soy milk with kefir grains.

Hydrochloric Acid

Hydrochloric acid is, in layman's terms, "stomach acid," which is produced by the cells of the stomach called parietal cells. HCl (Hydrochloric Acid) mainly functions to denature the proteins ingested, to destroy any bacteria or virus that remains in the food, and also to activate pepsinogen into pepsin.

Coconut Pie Crust

  • 1 12 cup dessicated coconut
  • 2 tbsp wholemeal flour (or corn flour)
  • pinch Celtic sea salt
  • approx 12 cup nut milk, soy milk or juice

Combine coconut and flour. Add enough nut milk to bind. Press into pie plate and back for 12-15 mins at 180o. NOTE: This tends to burn easily.

Whole Soy Bean vs Soy Protein Isolate

According to the American Dietetic Association, soy protein isolate contains antinutrients that can actually delay your body's ability to digest food and absorb nutrients into the blood stream.

The Asthma and Allergy Foundation of America estimates that soy protein is one of the most common allergens for food allergy patients.

Contrary to the isolated protein, whole soybeans in their natural state are packed with antioxidants, vitamins, minerals, fibre as well as proteins which are essential for human nutrition.

Excitotoxins

An excitotoxin is a toxic molecule that stimulates nerve cells so much that they are damaged or killed. Excitotoxins are found in many processed foods. Click Here to read an article by Kaye Sehm on Excitotoxins.

Hydrolysed Vegetable Protein

Hydrolyzed vegetable protein (HVP) is simply vegetable protein that has been broken down into its component parts, somewhat like it's been pre-digested.
Hydrolyzed vegetable protein, from plants like soy and wheat, is found in hundreds of prepared foods. It is a savory flavor enhancer and is called a hidden source of MSG.
