Pumpkin Soup

This soup is very smooth and has a lovely orange flavour.

  • 800 g pumpkin
  • 500 ml vegetable stock or vegetarian chicken stock
  • 1 teasps raw or brown sugar
  • 1 cup coconut cream
  • zest of 1 orange

Method:
Peel pumpkin and cut into cubes,add stock and sugar.Cook until soft and pour into blender.
Add coconut cream and orange zest.Blend until very smooth.
